In a sense, Joe, Cassie and Rachel have pulled together something very close to their hearts. Their collective passion for nature, for food, and the sourcing of nature’s larder. Wild ingredients loom large in this coastal area. It is also an area of pure natural beauty, the perfect place to explore, walk and forage.
THE CHEF: Joe has a keen interest in the sourcing of quality ingredients. His style of cookery focuses on natural textures, flavours and seasonal combinations. Introducing Joe to foraging has been a natural progression for him, and he is excited to be able to share in this experience.
THE HOST: Cassie has been taking guests on foraging and culinary experiences since 2012 in South Africa. She is really excited to be able to launch this experience in Cornwall at Housel Bay Hotel. Partnering with Rachel and Joe will make for a truly unique experience. Cassie has worked on sustainable projects since 2005.

Day 1.
Overview of the Day
Foraging Walk (Coastal / Seaweed)
Cooking Tuition
Day 2.
Foraging Walk (Hedgerow)
Cooking Demo
Each day starts with a full breakfast on the Terrace. After breakfast you will be given an overview of the delicious recipes to be prepared on the day before heading off on a foraging excursion along the coast, hedgerows or onto the beach.
Your meals will be truly seasonal, using a combination of local produce, and the foraged ingredients gathered on the day. Each evening will culminate in a three course meal, and an evening around a communal table eating the delights that we have foraged and cooked together.
The coast path is rugged, the hedgerows soft. Walks will be somewhere between a gentle amble and an invigorating excursion, depending on the weather, the group and people’s interests.
Under the direction of Head Chef Joe, you will work in teams to prepare a culinary experience truly expressive of our beautiful location.
The following morning your day will start with a hearty Cornish breakfast, followed by a talk about the day ahead.
Cost for the two day experience will be £380 per person sharing.
Single supplement is £25 per night.
This includes two breakfasts, two dinners and two light lunches
